Banana flower or Koldil in Assamese is used as a vegetable which is very rich in iron, fiber, antioxidant and many other vitamins and minerals. We can cook banana flower like any other vegetable but today I'm going to share boiled banana flower recipe with zero oil. We can serve this banana flower recipe with rice in lunch or dinner.

INGREDIENTS:
- 1 banana flower
- 1 potato chopped into cubes
- 1 taro root chopped into cubes
- 1 carrot chopped into cubes
- 1/2 tbsp ginger-garlic paste
- 1 onion, chopped
- Chopped green chillies (3-4)
- 1/2 tsp of black pepper
- 1/2 cup chopped coriander leaves
- Salt to taste
METHOD:
- Remove the outer petels of banana flower, collect the florets in each layer and keep aside. Keep doing in unless you find th soft and white part of the flower. Keep the white part aside.
- From the florets discard the stick like part which is in the middle.
- Now chop the white part of the banana flower together with the florets and then soak them in water for few minutes.
- Drain the water from chopped banana flower.
- Place the wok or pan in gas stove. Add chopped banana flower, potato, taro root and carrot. You can also add any other vegetable of your choice.
- Add ginger garlic paste and chopped onion. Add chopped chillies.
- Add 1 cup of water and cook for 15 minutes in low heat by covering the lid.
- Add chopped coriander leaves, black pepper and salt. Mix well. Cover the lid and in low heat cook for 10 minutes or until tender.
- Remove from heat. Serve hot.
* You can use pressure cooker instead of a pan.
