A papad or papadum is a thin round shaped flatten bread made from lentil or rice powder. It becomes crisp just like chip when fried or cooked with dry heat. The origin of papadum is in Indian subcontinent. Papads are served as a snack or meal accompaniment.
Stuffed papad is a simple recipe where papadums are stuffed with spicy potato mixture and then deep fried in oil. You can serve staffed papad as a starter also.

- 2 medium or large sized papadum pieces
- Oil to fry
- 3- 4 medium sized potatos
- 1 onion finely chopped
- 1/2 tsp cumin powder
- 1/2 tsp red chilli powder
- 1 tbsp mustard sauce
- 2 green chillies finely chopped
- 1 tsp chopped coriander leaves
- Salt to taste
METHOD:
- Boil potato. Peel off the skin and mash it completely.
- Add finely chopped onion. Add chopped green chillies and coriander leaves. Add cumin powder, salt and red chilli powder. Add mustard sauce. Mix everything well.
- Take the two pieces of papads. Cut both equally into half. Now you can make 4 stuffed papads from two pieces of papadums.
- Take half piece of a papad and dampen slightly on both sides.
- Roll the papad into cone shape.
- Now take a portion of the spicy mashed potato stuffing and place in the middle of the cone shape papad. Repeat with all the pieces of papads similarly.
- Heat oil in a pan. Deep fry stuffed papad pieces until crisp and golden.
- Drain and serve hot.
