Bhat aru Masor Petu Bhoja or Fried Rice with Fish Intestine is one of the signature recipe of Assamese cuisine. Generally leftover cooked rice is used to make this recipe. This recipe is very simple and served in the main course as a side dish with rice.

- 100 gm fish intestine of any fish, big or small
- 1/2 cup cooked rice
- 2 green chillies
- 1 onion, chopped
- 1/2 tbsp turmeric powder
- 2-3 tbsp mustard oil
- Salt to taste.
METHOD:
- Clean and wash the fish intestines under running water.
- Cut the chillies lengthwise and make half of them.
- Heat oil in a pan. Add onions and turmeric. Add fish intestines and cook for 2-3 minutes till the oil separates.
- Now add cooked rice, green chillies and salt. Cook til oil separates.
- Remove from heat. Serve hot with rice.
