Herbs and Cheese Muffins


Muffin is a form of bread but looked like a cupcake. Muffins can be sweet or savory. Herbs and cheese muffins are great savoury muffins that can be served in breakfast. You can use any herb of your choice to make this muffin and adding cheese makes it absolutely delicious.

I am a kind of person who loves to make simple recipes with simple ingredients. You can check my blog, there is not a single complicated recipe.  I don't try any recipe that looks complicated.  I like to use whatever I have in my kitchen and always look for alternative ingredients available in my kitchen.



In this muffin recipe I have used some Indian pennywort leaves also known as Asiatic pennywort. In Assamese these leaves are called 'bor manimuni'. It's scientific name is Centella asiatica. I grew these in my little kitchen garden. Together with this herb I have also used some leaves of  lemon basil.

Indian pennywort 

The recipe of herbs and cheese muffin is very simple. You just require flour, eggs, herbs, milk and cheese. You can bake these muffins in muffin tins. But if you don't have muffin tins, don't worry, you can use paper cups. I have made these muffins in paper cups and look these looks so perfect. Now let's go to the recipe now.

INGREDIENTS:
  • 2 cup all purpose flour (maida)
  • 1/2 cup unsalted butter or vfegetable oil 
  • 1/2 cup milk
  • 2 eggs
  • 1 tbsp baking powder 
  • 1/3 cup grated cheddar cheese 
  • 1/2 cup finely chopped Indian pennywort and lemon basil leaves. 
  • Salt and pepper to taste 

METHOD:
  1. In a large bowl beat eggs. 
  2. Add unsalted butter or vegetable oil. Mix well. 
  3. Add milk. Mix. 
  4. Add maida, baking powder, salt, pepper.
  5. Add grated cheese and chopped herbs. With the help of a spatula mix everything well. 
  6. Spray oil in muffin tins 
  7. Pour the batter in muffin tins. 
  8. In a preheated oven, bake for 30-35 minutes at 180 degrees.
  9. Get 8 big muffins with these much ingredients.

Pork with mustard greens (Lai xaak)

Mustard green is a green leafy vegetable. I love its taste.  Its little bitter but it taste good once cooked.  Many recipes can be made with this beautiful green leafy vegetable. Fish with mustard greens , mustard greens stir fry, mustard green raw chutney,  boiled mustard greens are some of the mustard greens recipes.    Pork with mustard greens is a very special recipe of  Assam . Use full grown mature and soft mustard green leaves only. This recipe is very simple and very less spices are used. Assamese cuisine  is in fact less spicy compared to other Indian cuisines.  Pork with mustard greens is served as a side dish with rice. Pork with mustard greens  is a very popular recipe many of you may have tried but  have you tried chicken with mustard greens . Mustard greens in Assamese is called Lai xaak and chicken in Assamese is called Kukurar mankho . Namsing : A Mishing Delicacy

 Mishing are an ethnic community living in parts of Assam and Arunachal Pradesh. Unlike other Assamese cuisines, Mishing cuisine is also unique of its kind. Mishing people are mainly non-vegetarian and rice is their main food. They eat different greens and herbs as vegetable together with fish, pork, chicken, duck meat etc. Namsing is a very popular dish among Mishing people. Namsing is nothing but dry and grounded fish . Fish Curry with Dry Elephant Apple (Ou Tenga)

Hey there!  I'm back again, after a long time. It's more than six months now, that I haven't written a single word in my blog. Sometimes staying motivated  to keep posting new posts everyday isn't so easy. But, I am back with a new recipe now. It's a simple Assamese style fish curry recipe or masor tenga cooked with dry elephant apple ( ou tenga ).  Dillenia indica, commonly known as elephant apple (ou tenga in Assamese) is used as a souring agent in Assamese cuisine.  We can eat both raw (by making a chutney) and cooked elephant apple. Assamese people eat ou tenga by adding it in lentil curry (dail) and by making sour fish curry (masor tenga). We can also preserve elephant apple by just sun drying it.
